Walnut Fudge Waffles


This is a wonderful dessert I made for Father's Day and Gary loved it.  I thickly sliced strawberries and put in a container of raspberries sweetened them a little with some sugar and topped with whipping cream.  I made Gary's a little different.  He loves ice cream.  So, on top of his waffle I put one scoop of vanilla ice cream, the berries over the ice cream and topped it with whipping cream.

Rich and delicious!

2 eggs
1/4 cup of butter, melted
1 teaspoon vanilla
1 cup buttermilk
1 cup flour
1/2 teaspoon of baking powder
1/2 teaspoon of baking soda
1/4 teaspoon of salt
1/4 teaspoon of ground nutmeg
3/4 cup sugar
1/2 cup cocoa
1/2 cup chopped walnut
1/4 cup semi-sweet chocolate morsels (optional)

Mix all dry ingredients together, add butter, vanilla, buttermilk and eggs.  Mix well.  Pour into a hot lightly greased griddle. 

These would be good with a big dollop of whipping cream. Or warm a container of sliced frozen strawberries and use this as your syrup for a brunch.
