February .......where did it go?


This is a different variety of a Christmas Cactus.  This is the third year for me to have it and the first time it has bloomed since I bought it.  It almost died :(  but it looks like it is going to make it.  I love it's flowers, so different from the traditional Christmas cactus.

It's been a busy month for me.  Cleaning out garden space and trying to get everything ready for planting.  Ordered my seeds this month and they came in this week so I'm very close to being ready to plant.  I've been thankful for the warmer weather.  It's been great for working in the yard but I haven't had my fill of having a fire in the wood stove every evening.  So I'm still hoping for some colder weather before I clean out the stove for the spring.

It's been an interesting winter season regarding the weather and this month has flown by. I've been pretty busy with this little guy and he is itching to get outside with me.  I think he's going to love gardening.

Chocolate Chip, Peanut Butter, Oatmeal, Pecan Cookies


I was making cookies yesterday for my husband (not really just for him big grin) and decided to add a few extra ingredients.  I had a small bag of chocolate chips and about 1/4 bag of another.  It called for one stick of butter and I added an extra half stick, an extra 1/2 cup flour, one teaspoon of vanilla instead of 1/2, an extra egg, one teaspoon of baking soda instead of 1/2.  I added one cup of peanut butter, one cup of oats and one cup of chopped pecans.  They were really great.  The peanut butter and chocolate are always the best!

Best Donuts Ever!


Our son came home a couple of nights ago with this huge box of donuts from Hurts.  Let me tell you, these donuts are gourmet and some of the best I have ever eaten.  As usual, I'm sorry to say the idea of putting this on my blog was an after thought.  All the donuts were gone!  :)  So I can't show you how wonderful they looked.  They are huge!  There were blue berry, chocolate with pieces of Reese's pieces sprinkled over the top, chocolate with a wonderful chocolate icing drizzled over the top, one with finely chopped peanuts, a pink icing with sprinkles.  All I can say, we love donuts, I think I'm a pretty good judge so if you live in Oklahoma it is worth a trip to Norman, Oklahoma.  Go to campus corner and you can't miss Hurts.

This is not good!  I go to Norman quite often and I think my car is going to automatically head for campus corner before I start home. LOL

Tuna Salad


This was such a great dinner this week that I decided to post it.  It was simple but tasted wonderful and really hit the spot for me.  I harvested another large batch of spinach, which has been doing wonderful with this mild winter weather.  So I made tuna salad and served it on a bed of fresh spinach and sliced black cherry tomatoes on top with a side of cottage cheese.

I make tuna salad two ways, one is sweet and one has a dill savory flavor.  This is not a gourmet recipe but it is really good.
Sweet: This recipe is for 4-6 people
4 cans white albacore tuna
3-4 stalks celery, diced
1 sweet onion, diced
5-6 sweet pickles, diced
1 1/2 cups of  Miracle Whip
5 hard boiled eggs, diced

Drain the tuna and give the juice to your cat. :)  Break up the chunks of tuna and add all the following ingredients and mix well.  Cover with plastic wrap and chill until ready to serve.

Savory:
Same as above only use Mayonnaise and dill pickles.  I use dill hamburger slices and I use about a cup diced and when I have fresh dill I use one tablespoon chopped.
