Walnut Fudge Waffles


This is a wonderful dessert I made for Father's Day and Gary loved it.  I thickly sliced strawberries and put in a container of raspberries sweetened them a little with some sugar and topped with whipping cream.  I made Gary's a little different.  He loves ice cream.  So, on top of his waffle I put one scoop of vanilla ice cream, the berries over the ice cream and topped it with whipping cream.

Rich and delicious!

2 eggs
1/4 cup of butter, melted
1 teaspoon vanilla
1 cup buttermilk
1 cup flour
1/2 teaspoon of baking powder
1/2 teaspoon of baking soda
1/4 teaspoon of salt
1/4 teaspoon of ground nutmeg
3/4 cup sugar
1/2 cup cocoa
1/2 cup chopped walnut
1/4 cup semi-sweet chocolate morsels (optional)

Mix all dry ingredients together, add butter, vanilla, buttermilk and eggs.  Mix well.  Pour into a hot lightly greased griddle. 

These would be good with a big dollop of whipping cream. Or warm a container of sliced frozen strawberries and use this as your syrup for a brunch.

Father's Day

I grew up in a family that really never verbalize their love.  I hate to say that it was never said but if it was I don't remember.  My husband and I have talked about this.  I told him I never doubted for one minute that I was loved but it was never spoken.

Isn't it true that actions speak louder than words!  When you are loved by the actions of someone you don't need to hear I love you because you are secure and you know you are loved.  It's nice to hear it said, but it's not important.  If you are truly loved by someone, you know!

I remember a father who died several years ago.  He was a professor and had three small children, I think 2 boys and a girl.  He wrote all of them letters and the letters were so touching they were turned into a book.  He made national acclaim and was on television telling his story before he passed.  I've always remembered his advice to his daughter, it was "never go by what a young man says to you, only look at what he does." I thought at the time that's the best advice a father can give his daughter.

This is a great quote by the Stoneheart but I think it applies to us all not just fathers.  In marriages, friendships, family, and to the person on the street who you really don't know, who needs a helping hand or just a smile.  Let's remember to show our love!

Cookies/GMO's

I wanted to relay some information I read in a health magazine and I'm sorry I forgot to write down the source but I think it was in something I picked up at Natural Grocer.  I love cookies so this wasn't what I necessarily wanted to read.  Although, I will say that for several years with the except of an occasional package of Oreo's for hub I usually always make all of our cookies.  I know it takes time to bake and if you work outside the home it's hard to find time but it is really the best for you and your family.

For several months, I've been going to start blogging about GMO's because I have found that a lot of people aren't aware of GMO's.  I will just give you a snippet of information but I want to encourage you to research this subject on your own, because it's bad.  Your children and grandchildren are going to be feed a life time of GMO products if we don't start doing something about it.  Sorry, I got off track there. 

This is the information from the article I read. "Cookies that contain corn, corn syrup or soy products  may be heavily treated with pesticides or likely to contain GMO's.  The same goes for crackers, cereal, breads and other gluten-free goods.  Eighty-eight percent of corn grown in the United States is genetically modified and 93% of soy beans are genetically modified." Start reading labels if you don't already.  I read recently on a label that high fructose corn syrup was in a package of wieners.  What's that doing in wieners? I found that high fructose corn syrup and soy is in almost everything you buy.

GMO stands for "genetically modified organism."  My daughter and I were talking about this recently.  We both remembered the first time we heard about GMO's, it was on Rush Limbaugh's radio program about 10 years ago and he was taking about GMO's and how they supposedly were going to add salmon DNA to a tomato seed.  At the time, I thought why would someone want to do that?  Well, it's sinister when you find what is behind all this.

We are a big chip and salsa family and I found a really good corn chip that is Non-GMO.  Especially with corn products, you want to buy NON-GMO.  I've read where that have put Round-up in corn seeds.  I was looking at popcorn recently.  It doesn't matter if it's organic if the corn is not from an heirloom seed.  The seeds need to be heirloom to insure they are not GMO. 

Crest is now carrying flour and corn meal that is labeled Non-GMO.  Yes, it does cost more but not that much more. For the health of your family, it is very important. My focus for my family is on corn products and high fructose corn syrup.  I don't buy anything with high fructose corn syrup in it.

I've barely scratched the surface here but I'll go a little deeper soon.

Singer/Song Writer Neil Young

My husband is a long time fan of Neil Young and he was sharing this article with me this evening.We agree with what he had to say.  Our political system is so corrupt.  I really get nauseated when I hear people say" let your voice be heard, go vote." If you really want your voice to be heard DON"T VOTE! The candidates who are put on display for the American people to vote for are an insult to our integrity and intellect.  The last time I voted was for Ronald Reagan.  I frankly could bite a nail into over what I see on television when campaigns start.  I just don't watch that stuff anymore.

Sunrise!


Beautiful sun rise on the farm last week. " Sunrise, sunset quickly flow the days" from Fiddler on the Roof. I think that's how it goes.  :)  But how quickly do these summer days flow by. Our neighbor started baling the pasture last week.  How many times have I said this, "I love the scene of those huge bales in the pasture and a beautiful sunrise in the distance or sunset.  Just nothing like it!

A Good Soak in the Tub

I was listening to a lecture recently on essential oils and the speaker was talking about breaking the fright/flight syndrome.  Now, its not like the actual fright/flight where your heart is racing and you have been frightened pretty bad but it's just an accelerated metabolism.  That's the best way I can explain it.  You may have a hard time relaxing. 

Well, I knew I needed what he was talking about.  I have no trouble going to sleep but I sometime have nights where I wake up around 3:00 a.m. and I'm wide awake.  In the lecture, he suggested taking a hot bath and using one cup of epsome salts with about 8-10 drops of Chamomile and 8 drops of Vetiver and soak in this for 20 minutes.

I didn't have chamomile so I used lavender, vetiver and I used some magnesium crystals that I soak in.  Even this mixture worked like a charm.  I was very relaxed and slept for 7 1/2 hours which is very unusual for me.  I love vetiver it has a wonderful earthy smell. 

I always recommend Young Living Essential Oils they are the best therapeutic grade oils around.  Try this, it really works.  In the lecture he said to do it at least 3 nights a week to slow things down or the best is every night if you can.
