The Prayer

A gift, to you, my readers. I love this song and sometimes we just need to hear some beautiful music to take us away to a quiet and peaceful place for awhile.

My Dream Home

I have admired this house for years.  When I first spotted this house 20 years ago it didn't look like this.  It was run down and needed a lot of work.  I saw the potential and knew it could be a beautiful home.  I spotted it shortly after we moved into our home on Cornville Road and thought you need to be on our street.  In fact, you are just what I ordered.  This was exactly what I was looking for when we found our home.  How hard would it be to move you down the road to our street?  I definitely gave it some thought.  I know it's hard moving a one story and I figured two stories would not make it. Over the years, every time I have driven by I always drool.  But I continued to think, you are too beautiful to just be sitting our here on an ugly lot and in front of the railroad tracks. Bah!!

Several weeks ago, I drove down this highway.  I hadn't been this way in quite some time and I was pleasantly surprised to see what was being done to this beauty.  It is my dream home but it still needs a better location.  An addition has been added onto the back with all new windows through out, new columns and a beautiful new porch.  I'm going back sometime when I have more time and see if they will let me take a stroll through my dream and see if the inside is as wonderful as I have imagined it to be.

I am so happy for the family who has revived this stately beauty.  I wish them many wonderful years in "My Dream Home."

The Big Short

"The Big Short" is one of the new movies that came out at Christmas time.  I saw it this week and I'm not really a big movie goer but I would encourage you to go see this one.  It gives you a picture of what happened in 2008 when the housing bubble busted and the government bailed out the big bankers to a tune of a trillion dollars.  If you don't believe the stock market is manipulated you've got to see this.  It's even said in the movie that the tax payers will pay the bill for what these law breakers did.

One last bit of information check out the Federal Reserve Bank.  I know I used to think it was a government agency because of its name but it is not.  It is privately owned.  These people regulate the interest rate, decide how much money is going to be printed and where and when our money is spent.   If you were like me, I thought the United States treasure did those types of things.  This is not mentioned in the movie, I just wanted to mention it so you could do your research.

It's time to realize what type of people are running this country.  Someone I respect said a long time ago, "that politics is the art of compromise."  I have to agree with her totally.  You think you elect good men to go to congress, who knows if they really are, all I know is before long everything they said they would do, they don't do.  A few dollars is dangled in front of their face and that's it.

I've said it before and I'm saying it again.  The whole system is corrupt.  If you really want to make your voice heard....Don't Vote!  Think about it, that would get someone's attention.  Wear a sign I Didn't Vote Today.  LOL..... I would love it!

Fresh Garlic

I wanted to pass along this information.  I feel that it is important if you are taking fresh garlic or cooking with it for its health benefits.   I take fresh garlic almost every day for a supplement as part of my daily health regimen.   I was recently reading an article about taking garlic and using it in cooking.  Garlic derives its health supportive properties from and organosulfur compound known as allicin.  When the garlic is crushed or chopped it causes the garlic to be converted into allicin.  After you chop or mince the garlic let it sit for 5-10 minutes to allow the allicin to form.  The allicin is destroyed if it is eaten or cooked in any way before it is allowed to sit and form.

French Onion Soup

I love French onion soup!  One evening this week we had spinach salad and French onion soup and it hit the spot.  I have never been really happy with my original recipe and every time I have made it I have tried something a little different.  I finally hit the mark and figured out how to get the taste I wanted.  Onions with the beef broth from a can just didn't cut it for me.

The way to make excellent onion soup is to have good beef broth.  I made a couple of roast in December for various things and I saved the broth from these roast.  I seasoned the roast with salt, pepper and garlic and one package of onion soup mix.  I pour this over the roast with 2 to 3 cups of water.  I put the roast in a foil pocket and seal it after I put in the water.  This also makes a wonderful roast gravy.  I put the juices from the roast in a plastic container in the frig but you could freeze this until you are ready to use it.

When I was ready to make the soup, I used three large yellow onions.  I peeled, sliced them in half and the cut thin slices.  Put all the sliced onions in about 3 tablespoons of butter and cook the onions stirring often until they are golden.  Then add your beef juices and about one more cup of water.  Taste and season at this time with salt and pepper.  I also added 2 sprigs of fresh thyme. I let this simmer for about 30 minutes then let it sit for about 30 minutes.

I sliced French bread about 1/2 inch thick slices and put them in the oven to toast them on both sides.  Ladle your soup into an oven proof bowl and put one slice of French bread on top of the soup and then top with shredded mozzarella cheese.  I had some Provolone and Asiago on hand that I shredded. Then add a generous amount of cheese to the top of the bread.  Then put this under the broiler until the cheese melts and serve.

This was very rich and delicious and I'll have to say it was the best onion soup I have eaten.  I'm not always going to have the juice from a roast to make French onion soup but if you want excellent French onion soup this is the way to get it.

Great Actor

Ok, I'm judging but this morning I can't help it.  You'll have to forgive me.

I only turn on the T.V. every morning to catch the weather and then it's turned off but this morning there was a little news clip before the weather.  This is exactly why I don't watch the news.  The clip was of Obama crying.  I found myself talking to myself out loud when it was over.  I thought surely humanity will see through this.  I can go off on a lot of things here but only one.  If he really cares about people then why did he pass the health care package that is now in place.  I'll only say that and believe me there are a lot of things I could say.

I'm not a member of either political party and actually I think the Bush's are worse than Obama.  Just to set the record straight.  I have to remember his is just a pawn in the hands of evil men!

I'm sorry, I had to vent over that one this morning.  I thought I would throw up when I saw that.  In fact, he's not an actor because that was not believable or not to me.
